Recipe: Easy French Crepes for Breakfast


2 eggs
150ml milk
50ml sparkling white wine / water /cider
250gr all-purpose flour
1 tablespoon sugar
1 pinch of salt
1 tablespoon neutral cooking oil or melted butter
1 teaspoon vanilla extract
Toppings of choice

Step 1: Combine and sift all your dry ingredients together

Step 2: add the dry ingredients in a large mixing bowl and make a small well in the center

Step 3: Crack two eggs in the well and slowly start mixing the eggs with a whisk, trying to incorporate as little flour as possible.

Step 4: Add milk little by little whilst whisking and slowly incorporating more and more of the flour.

Step 5: Once all the milk has been added and all the flour incorporated you should have a thick batter reminiscent of American style pancake batter.

Step 6: Slowly add your sparkling liquid of choice and whisk until you have a smooth batter, crepe batter should remain on the thinner side to make sure the crepes remain thin. if your batter feels to thick add more milk until you reach the right consistency and finally whisk in the cooking oil or melted butter of your choice and the vanilla extract.

TIP: to test the batter for consistency dip the backside of a spoon into it and run a straight line over the spoon with your finger, the batter should run smoothly of the spoon but the line should not fade immediately.

Step 7: Grease your pan with the fat of your choice (if it is not a nonstick pan), ideally here we use a crepe pan if you do not have one you can use a normal frying pan and if you want to get one you can use this link to get one. 

Step 8: Once the pan has heated up, use a ladle to spoon one portion of the batter in the center of the hot pan, quickly tilt your pan in circles to try and get the batter to reach all sides of the pan. If you have a hard time reaching the edges it might indicate your batter is still too thick.

Repeat this step until you have run out of batter.

TIP: you can keep the pancakes hot by storing them on a large plate kept above a pot with some hot water or by keeping them in an oven that was heated and then turned off.

Step 9: Server the crepes with the toppings and condiments of your choice for a perfect breakfast or snack!
