Fresh Food And Zero Waste – Gianfranco

Gianfranco is from Sardinia but lives in Prague for 20 years already. He is a chef with a passion for being a host and preserving the environment at the same time.

His new restaurant is called “A Posto”, which translates as “Everything alright”. This is the core of the restaurant concept. It is a unique place, where people can feel at home and connect with the surrounding community. May it be for a business lunch, dinner with family and friends, or any other occasion. However, it also stands for reducing food waste, which is almost zero, he says. With this in mind and seasonal ingredients, it creates an ever changing menu of culinary discoveries. It is hard to get all the specialities from Italy. The rest is sourced from local farmers with a careful selection of natural produce and farm meats. You can also just pop by and get their home-baked bread and fresh pesto to take away.



“Food is about communication, culture and evolution,” he says. Combined with the influence of all Mediterranean cultures on the Italian kitchen, this restaurant creates one of the most authentic experiences and contributes to zero food waste.
